3. Stuffing the Zucchini

Once the rice mixture is cooked, remove it from the heat and let it cool slightly. Carefully fill each hollowed-out zucchini with the rice filling, pressing down to ensure they are well-packed. Leave a little space at the top, as the rice will expand as it cooks.

4. Cooking the Stuffed Zucchini

In a large pot, pour the tomato sauce and gently place the stuffed zucchinis upright. Add enough water or vegetable broth to cover the bottom of the pot (about 1 cup). Bring the liquid to a boil, then lower the heat, cover, and simmer for about 30-40 minutes, or until the zucchinis are tender and the rice is fully cooked.
