  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

Step 2: Increase the heat to medium-high and add the ground beef to the pot. Cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.

Step 3: Once the beef is browned, add the diced carrots, potatoes, and bell pepper to the pot. Stir and cook for about 5 minutes until the vegetables begin to soften.

Step 4: Add the can of diced tomatoes, tomato paste, beef or vegetable broth, and spices (red pepper flakes, cumin, salt, and pepper) to the pot. Stir well to combine all ingredients.

Step 5: Bring the soup to a boil, then lower the heat to a simmer. Cover the pot and let it cook for about 20-30 minutes, or until the vegetables are tender. Stir occasionally and adjust seasoning to your preference.

Step 6: Once the vegetables are cooked through, remove the pot from heat. Serve the soup hot, garnished with fresh chopped parsley.
